TIPS FOR PREPARING POACHED EGGS
- Fresh eggs are always best for poaching. The whites nearly always hold up better than if they are several days or weeks old.
- Avoid stray egg whites by placing each cracked egg in a fine mesh sieve before poaching.
- Use a saucepan with a few inches of water. Bring the water to a bare simmer.
- Use your discretion with vinegar. Many people prefer to add a tablespoon or two of vinegar to the water so as to prevent runny eggs, but this may impact the taste.
- Slowly slip a cracked egg into the simmering water. If necessary, push the egg whites closer to the yolk with a spoon.
- Try the whirlpool method. Some people prefer to swirl the water in the saucepan around before adding the egg. This approach is believed to prevent the egg white from spreading across the pan.
- Cover the pan and let the eggs heat for four minutes. Ideal timing will vary somewhat based on the size of the eggs. Typically, egg whites are cooked but yolks are runny after four minutes.
- Use a slotted spoon to remove poached eggs from the saucepan. The eggs can be served immediately, chilled in an ice bath, or refrigerated for up to eight hours before they’re reheated and served.
If you’re really struggling to poach eggs, you can always use a specially-designed poaching pan. Although this technically coddles the eggs rather than poaches them, it still produces cooked egg whites and runny yolks.
